Feel-Good Mac & Cheese
I grew up eating mac & cheese, so I HAD to come up with a healthy version. I got totally inspired by this amazing vegan book "Let's Eat" by Isa Chandra Moskowitz. The cheesy sauce is made of butternut squash, and I use the quinoa macaroni pasta for a gluten-free version. I also load it with steamed broccoli. The kids love it!
