Spaghetti Squash Puttanesca

If you’re looking for something extremely flavourful and comforting, you can’t go wrong with this one! Inspired by this popular Italian dish “Spaghetti Alla Puttanesca”, with pasta, olive oil, garlic, olives, tomatoes and cheese. I think I’ve mastered a healthy version of it! And it’s so easy, all you have to do is bake everything in the oven then mix it all together. The cheese is optional, but only takes 5 minutes!

Spagetti Squash Puttanesca

Prep Time: 15 mins
Bake Time: 40 mins
Yields: 2-3 servings


  • 1 medium spagetti squash.
  • 2 cups cherrie tomatoes, cut in half.
  • 1 red bell pepper, julienned.
  • 1 large red onion, julienned.
  • 2 large garlic cloves, crushed.
  • 1 Tbsp balsamic vinegar.
  • 1 Tbsp olive oil.
  • 1 tsp maple syrup.
  • 1/2 tsp dijon mustard.
  • 1/4 tsp salt.
  • 1/2 cup macadamia nuts.
  • 1/2 Tbsp lemon juice.
  • 2 tsp nutritional yeast.
  • 1/4 tsp salt.
  • 1/2 cup Kalamata olives, pitted and chopped. I recommend getting fresh ones!
  • 1/2 cup fresh parsley, chopped.


  1. Heat oven to 350F
  2. Cut the spaghetti squash in half and place it face down on a oily baking dish.
  3. I a medium bowl, place the tomatoes, bell pepper and onion, and set aside.
  4. In small bowl, whisk together the garlic, balsamic vinegar, olive oil, maple syrup, dijon mustard, and salt. Pour into your bowl of veggies and mix well.
  5. Transfer the veggies in a baking dish and place in the oven, as well as the squash. Bake for 40 minutes.
  6. Take everything out of the oven. Once the squash has cooled down a bit, scoop out the seeds from the middle and discard. Scoop out the insides with a spoon, and squeeze out the excess water with you hands, then transfer to a measuring cup until you get 2 cups. Transfer to a wok or pan. 
  7. Transfer the baked veggies to your wok or pan, along with the spaghetti. Set aside.
  8. To make the optional cheese; place the macadamia nuts, lemon juice, nutritional yeast and salt in a food processor. Process until it's crumbly. Transfer to your wok or pan.
  9. Lastly, add half of the cheese, the olives and parsley. Mix everything together and heat up for a few minutes before serving. Add fresh ground pepper, salt to taste. Serve with remaining cheese and olives on the side.

Additional Info

You can modify this dish to your preference by adding more dijon, olives, or even oregano.

    Made this for dinner tonight and added some beans, it was delicious! I love that it is almost a “one pot” recipe! Will make this again for sure.
