Who doesn’t love potato salad, especially when extra creamy and flavourful! This side dish can easily be transformed into a nutritious meal by adding steamed kale or arugula. Also a great option for dinner parties.
Classic Potato salad

Cook Time: 10 mins
Yields: 3-4 servings
8 medium sized potatoes (5-6 cups), peeled, boiled and diced.
2 celery stalks, finely diced.
1 cup radishes, finely sliced. A mandolin is great for this.
3-4 green onions, finely chopped.
1/2 cup corn.
1/2 tsp fresh rosemary, finely chopped.
1 Tbsp capers.
Fresh Dill to taste.
1 cup cashews.
1 tsp dijon.
1 Tbsp nutritional yeast.
1 Tbsp lemon juice.
1/2 tsp salt.
1/2 cup water.
In a large bowl combine the potatoes, celery, radishes, onions, corn, rosemary, capers and dill.
In a high-speed blender, throw in the cashews, dijon, nutritional yeast, lemon, salt and water. Blend until really smooth. If you don't have a Vitamix you may need to add a little water.
Transfer mixture into your potatoes and mix well. Enjoy!
You can play around with different vegetables, herbs and spices.. Arugula lettuce is really nice with this dish, as well as parsley, cilantro or oregano.
